Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa (chunky preferred)
  • 1 can (15 oz) black beans, drained & rinsed
  • 1 cup corn kernels (frozen or canned)
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • 1/2 cup diced red onion
  • 1/4 cup sliced jalapeños

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet, cook ground meat over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and 1/2 cup water. Simmer for 2-3 minutes.
  4. Stir in salsa, beans, and corn. Heat for another 2-3 minutes.
  5. Layer half of the crushed tortilla chips in the baking dish.
  6. Spread the meat mixture evenly over the chips.
  7. Sprinkle 1 cup cheese over meat layer.
  8. Add remaining chips and top with final cup of cheese.
  9. Bake for 18-20 minutes until cheese is bubbly and golden.
  10. Top with diced onion, jalapeños, and any optional toppings. Let rest 5-10 minutes before serving.
