Ingredients

2 boneless skinless chicken breasts

8 oz fettuccine pasta

3 cloves garlic, minced

2 tablespoons butter

2 1/2 cups chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped parsley (optional)


Instructions

1. Turn the Instant Pot to “Sauté” mode. Melt butter and add garlic. Sauté for 1 minute until fragrant.

2. Place chicken breasts in the pot. Pour in chicken broth. Season with salt and pepper.

3. Break fettuccine in half and layer over chicken in crisscross fashion. Do not stir.

4. Seal lid and set to high pressure for 8 minutes. Allow 5 minutes natural release, then quick release.

5. Remove chicken, shred with forks, and return to pot.

6. Switch back to “Sauté” mode. Stir in heavy cream and Parmesan. Let sauce thicken for 2–3 minutes.

7. Stir well and garnish with parsley before serving.

Notes

Use freshly grated Parmesan for a smooth, creamy sauce.

Don’t stir the pasta before cooking to prevent a burn notice.

Reheat leftovers with a splash of milk to revive the creamy texture.
