Ingredients

2 tablespoons butter

4 bone-in pork chops (¾1 inch thick)

1 teaspoon salt

1 teaspoon black pepper

1 yellow onion, thinly sliced

3 garlic cloves, minced

2 tablespoons all-purpose flour

1 ½ cups chicken broth

1 cup heavy cream

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

45 medium russet potatoes, peeled and thinly sliced


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.

2. Pat pork chops dry and season both sides with salt and pepper.

3. In a hot skillet, melt 1 tablespoon butter and sear pork chops for 2–3 minutes per side. Remove and set aside.

4. In the same pan, add remaining butter and sauté onions for 3–4 minutes until translucent. Add garlic and cook for 30 seconds more.

5. Stir in flour, coating the onions. Slowly whisk in chicken broth and then heavy cream. Add thyme and bring to a simmer. Let sauce thicken for 5 minutes. Season to taste.

6. Layer half the potatoes in the baking dish, pour over half the cream sauce. Add pork chops on top, then layer remaining potatoes and sauce.

7. Cover with foil and bake for 45 minutes. Remove foil and bake another 15–20 minutes until bubbly and golden.

8. Let casserole rest 10 minutes before serving.

Notes

For the best texture, slice the potatoes thinly and uniformly—about 1/8-inch thick.

Searing the pork chops first locks in flavor and gives a golden crust that stands out in the final bake.

Letting the casserole rest before serving thickens the sauce and improves flavor.
