Ingredients
1 tablespoon sesame oil
3 cloves garlic, minced
1 red chili, finely chopped
450 g ground beef
2 tablespoons soy sauce
1 tablespoon fish sauce
1 teaspoon brown sugar
0.25 teaspoon ground white pepper
1 cup Thai basil leaves, chopped
12 rice paper wrappers
0.5 cup shredded carrot
0.5 cup cucumber, julienned
0.25 cup green onions, chopped
0.5 cup fresh mint or cilantro leaves
lettuce or baby spinach (optional)
2 tablespoons soy sauce (for sauce)
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
1 clove garlic, minced
0.5 teaspoon chili flakes
1 tablespoon water
0.5 teaspoon sesame seeds (optional)
Instructions
1. Heat sesame oil in a skillet or wok. Add garlic and chili; stir for 30 seconds.
2. Add ground beef and cook for 5–7 minutes until browned.
3. Stir in soy sauce, fish sauce, brown sugar, and white pepper. Cook for 2–3 minutes.
4. Add chopped Thai basil, stir, and remove from heat. Let cool.
5. Fill a large bowl with warm water. Set up your damp rolling surface.
6. Dip one rice paper wrapper in water for 5–8 seconds and lay it flat.
7. Layer basil or mint leaves, beef, carrots, cucumber, and onions in center.
8. Fold the bottom over the filling, then the sides, and roll tightly.
9. Repeat with remaining wrappers and fillings.
10. Slice rolls in half with a sharp knife.
11. Mix all dipping sauce ingredients in a bowl.
12. Serve rolls with dipping sauce and extra herbs if desired.
Notes
Let the beef filling cool before rolling to avoid tearing the rice paper.
Work on a damp surface to prevent sticking while rolling.
Don’t over-soak the rice paper—just a few seconds in warm water is enough.
