Ingredients

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth (or chicken broth)
  • 2 cups water
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 810 lasagna noodles, broken into pieces

For the Cheese Topping:

  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the Meat and Aromatics: Heat olive oil in a large pot over medium heat. Add ground beef or sausage and cook until browned. Drain excess grease. Add onions and cook for 3-4 minutes until softened. Stir in garlic and cook for another 30 seconds.
  2. Build the Broth: Pour in the beef broth, water, crushed tomatoes, diced tomatoes, and tomato paste. Stir well. Add sugar, basil, oregano, thyme, and red pepper flakes. Season with salt and pepper. Bring to a gentle boil, then reduce heat and simmer for 20 minutes.
  3. Add the Pasta: Stir in the broken lasagna noodles. Simmer for 10-12 minutes, stirring occasionally, until pasta is tender.
  4. Prepare the Cheese Topping: While the soup cooks, mix ricotta, Parmesan, and half of the mozzarella in a bowl.
  5. Assemble and Serve: Ladle soup into bowls and top with a generous dollop of the cheese mixture. Sprinkle with the remaining mozzarella and garnish with parsley or basil.
