Ingredients

  • 4 cups bread flour
  • 1 1/2 cups warm water (110°F)
  • 2 1/4 tsp instant yeast (1 packet)
  • 1 tbsp brown sugar
  • 1 1/2 tsp salt
  • 2 tbsp unsalted butter, melted
  • 1/2 cup baking soda (for water bath)
  • 1 large egg, beaten (optional, for egg wash)
  • Coarse salt, for topping

Instructions

  1. In a large bowl, combine warm water, brown sugar, and yeast. Let sit until foamy, about 5 minutes.
  2. Add melted butter, salt, and flour. Mix until a dough forms, then knead for 8 minutes until smooth.
  3. Place dough in a greased bowl, cover, and let rise for 1 hour.
  4. Preheat oven to 450°F (230°C). Line two baking sheets with parchment paper.
  5. Punch down dough and divide into 8 equal pieces. Roll each into a 20-24 inch rope and shape into pretzels.
  6. Bring 8 cups of water to a boil. Slowly add baking soda. Dip each pretzel in the bath for 20-30 seconds, then place on baking sheets.
  7. Brush with beaten egg if using, and sprinkle with coarse salt.
  8. Bake for 12-14 minutes, until golden brown.
  9. Let cool slightly before serving.
