Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 8 cups chicken broth
- 1 bay leaf
- 2 cups cooked shredded chicken
- 3 cups wide egg noodles
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5–6 minutes until vegetables are softened.
- Stir in minced garlic and cook for 1 more minute.
- Pour in chicken broth and add the bay leaf. Bring to a boil, then reduce to a simmer and cook for 15–20 minutes.
- Add egg noodles and cook according to package instructions, about 7–8 minutes.
- Stir in shredded chicken and cook for 2–3 minutes until heated through.
- Season with salt and black pepper to taste.
- Remove bay leaf, stir in chopped parsley, and serve warm.
