Description

Ingredients

1 tablespoon olive oil

1 pound Italian sausage

1 cup diced carrots

1 cup diced celery

1 small onion, diced

3 cloves garlic, minced

6 cups chicken broth

1 teaspoon Italian seasoning

Salt and pepper to taste

9 ounces cheese tortellini

2 cups chopped kale

3/4 cup heavy cream

1/2 cup grated Parmesan cheese


Instructions

1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, about 6–8 minutes. Remove and set aside.

2. Add carrots, celery, and onion to the pot. Cook until softened, about 5–6 minutes. Stir in garlic and cook 1 more minute.

3. Pour in chicken broth. Add Italian seasoning, salt, and pepper. Simmer for 10 minutes.

4. Add tortellini and cook for 4–6 minutes or until tender.

5. Stir in kale and let it wilt, about 2–3 minutes.

6. Reduce heat to low, stir in cream, and return sausage to the pot.

7. Simmer everything together for 2–3 more minutes.

8. Serve hot, topped with grated Parmesan.

Notes

Refrigerate leftovers for 3–4 days. Add broth when reheating as tortellini may absorb liquid.

To freeze, store the base without tortellini and cream. Add those fresh when reheating for best texture.
