2 (10 oz) packages frozen chopped spinach, thawed and drained

1 (10.5 oz) can cream of mushroom soup

1 cup sour cream

2 large eggs

1 1/2 cups shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup finely chopped onion (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup panko breadcrumbs (optional)


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

2. Thaw spinach completely and squeeze out all excess moisture.

3. In a large bowl, combine mushroom soup, sour cream, eggs, salt, pepper, and half of the cheddar cheese. Mix well.
