Ingredients
2 cups cooked turkey, shredded
2 cups egg noodles
2 carrots, sliced
2 celery stalks, chopped
1 medium onion, diced
2 cloves garlic, minced
8 cups chicken or turkey broth
1 tablespoon olive oil or butter
1 teaspoon dried thyme
1 bay leaf
salt, to taste
black pepper, to taste
2 tablespoons fresh parsley, chopped (optional)
Instructions
1. Heat olive oil or butter in a large pot over medium heat. Add onions, carrots, and celery. Cook for 5–7 minutes until softened. Stir in garlic and cook for another minute.
2. Pour in the broth. Add thyme and bay leaf. Bring to a boil, then reduce heat and let it simmer for 10 minutes.
3. Add shredded turkey and cook for 5–7 minutes, allowing it to heat through and absorb the flavors.
4. Stir in egg noodles and cook for 8–10 minutes until tender.
5. Season with salt and pepper. Remove bay leaf and thyme stems. Stir in fresh parsley before serving.
Notes
Use rotisserie chicken if you don’t have leftover turkey.
