Ingredients
- 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons Cajun seasoning (plus more to taste)
- Salt and black pepper, to taste
- 2 tablespoons olive oil or butter
- 3 cups cooked penne pasta (or other short pasta)
- 1 cup ranch dressing
- 1 cup chicken broth
- 1 1/2 cups shredded mozzarella cheese
Instructions
- Season chicken pieces with Cajun seasoning, salt, and pepper.
- Heat olive oil or butter in a skillet over medium-high heat. Add chicken and sear until golden and fully cooked, about 6–8 minutes. Remove and set aside.
- In a pot of salted boiling water, cook pasta until al dente. Drain and reserve 1/2 cup pasta water.

- Reduce heat and stir in mozzarella until fully melted and smooth.
