Ingredients
500 g chicken breast or thighs, cut into bite-sized chunks
250 g cremini or button mushrooms, halved
500 g baby potatoes, halved
2 tbsp olive oil, divided
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup freshly grated Parmesan cheese
1 tsp dried Italian herbs
1 tsp kosher salt, plus more to taste
1/2 tsp black pepper, freshly ground
2 tbsp fresh parsley, chopped (for garnish)
2 tbsp dry white wine (optional, for deglazing)
Instructions
1. Preheat oven to 200°C (400°F). Toss potatoes with 1 tbsp olive oil, salt, and pepper; place cut-side down on a tray. Roast 25–30 minutes until golden and crisp.
2. Heat remaining 1 tbsp olive oil in a large skillet over medium-high. Pat chicken dry, season with salt and pepper, and sear 2–3 minutes per side until golden. Transfer to a plate.
3. Add butter to the same skillet. Sauté mushrooms with a pinch of salt for 4–5 minutes until browned; transfer with chicken.
4. Lower heat to medium. Add garlic; cook 30 seconds. Deglaze with broth (and optional wine), scraping up browned bits. Stir in cream, Parmesan, and Italian herbs; simmer 3–4 minutes until slightly thickened.
5. Return chicken and mushrooms; simmer 2–3 minutes until chicken is cooked through and sauce coats the pieces. Adjust salt and pepper. Garnish with parsley. Serve with roasted potatoes.
Notes
Use a mix of cremini and shiitake for deeper, savory mushroom flavor.
Warm the cream before adding to reduce the chance of splitting.
Freshly grated Parmesan melts smoother than pre-grated and prevents graininess.
