Ingredients
400g chicken breast or thighs
2 tablespoons olive oil (for marinade)
1 tablespoon Greek chili seasoning
1 teaspoon smoked paprika
Salt and pepper to taste
200g asparagus spears
2 tablespoons olive oil (for asparagus)
¼ cup grated Parmesan cheese
500g gold potatoes, diced
1 tablespoon olive oil (for potatoes)
½ teaspoon paprika
1 cup heavy cream
¾ cup smoked feta cheese, crumbled
2 tablespoons chopped fresh parsley
½ teaspoon cracked black pepper
Instructions
1. Cut chicken into chunks and toss with olive oil, Greek chili seasoning, smoked paprika, salt, and pepper. Marinate for 20 minutes.
2. Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, pepper, and paprika. Roast on a tray for 25–30 minutes, flipping halfway through.
3. Trim asparagus ends and place on a baking tray. Drizzle with olive oil, season with salt and pepper, and sprinkle Parmesan over. Roast during the last 12–15 minutes of the potatoes’ time.
4. Heat a skillet over medium-high heat. Sear marinated chicken chunks for 5–7 minutes, turning to brown all sides. Cook until fully done.
5. In a saucepan, heat heavy cream over medium until it begins to bubble. Stir in smoked feta and whisk until smooth. Season with cracked pepper and a pinch of salt if needed. Simmer until thickened.
6. Plate the chicken and drizzle (or pool) smoked feta Alfredo sauce over it. Add roasted potatoes and asparagus.
7. Garnish with fresh parsley and extra cracked pepper. Serve hot.
