Ingredients

1 lb boneless skinless chicken breast, cut into bite-sized cubes

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 cup broccoli florets

1/2 cup sugar snap peas or snow peas

1 medium carrot, thinly sliced

1/4 cup chopped green onions

1/3 cup green peas (fresh or frozen)

1 tbsp sesame oil or neutral oil for cooking

2 cups cooked wild rice

1/3 cup low-sodium soy sauce or tamari

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tsp cornstarch

2 tbsp water

Optional: sesame seeds, extra chopped green onions, red pepper flakes


Instructions

1. Cook the wild rice according to package instructions, fluff it with a fork, and set aside covered.

2. In a small bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. In a separate bowl, mix cornstarch and water for slurry.

3. Heat a wok or skillet over medium-high heat. Add 1 tbsp sesame oil and sear the chicken for 6–8 minutes until golden and cooked through. Set aside.

4. In the same pan, stir-fry carrots, bell peppers, and broccoli for 4–5 minutes. Add snap peas, peas, and green onions. Stir-fry 2 more minutes.

5. Return chicken to the pan, pour in teriyaki sauce, and bring to simmer. Stir in the slurry and cook 1–2 minutes until thickened.

6. Serve hot over warm wild rice. Garnish with sesame seeds, scallions, or chili flakes.

Notes

Chop all ingredients before starting to stir-fry for a smoother process.

Use high heat and don’t overcrowd the pan for best texture.

For added depth, marinate the chicken in some of the sauce 15 minutes ahead.
