  • 1 can (15 oz) white beans (Great Northern or Cannellini), drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 oz cream cheese, softened

Seasonings & Spices:

  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper (optional, for extra heat)

Garnishes (Optional):

  • Fresh cilantro, chopped
  • Shredded cheese (cheddar, Monterey Jack, or pepper jack)

Instructions

Step 1: Sauté the Aromatics

  1. Heat a large pot or Dutch oven over medium heat and add a drizzle of oil.
  2. Sauté the diced onion for about 3–4 minutes until softened.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 2: Cook the Chicken

  1. Add the chicken breasts to the pot and season with cumin, chili powder, paprika, oregano, salt, and black pepper.
  2. Pour in the chicken broth and add the diced green chilies.
  3. Bring to a simmer, cover, and cook for 15–20 minutes until the chicken is fully cooked.

Step 3: Shred the Chicken

  1. Remove the cooked chicken from the pot and shred it with two forks.
  2. Set it aside while you continue with the base.

Step 4: Add the Beans and Corn

  1. Stir in the white beans and corn kernels.
  2. For a thicker chili, mash some of the beans before adding them.
  3. Let everything simmer for about 5 minutes.

Step 5: Make It Creamy

  1. Reduce the heat to low and stir in the cream cheese until fully melted.
  2. Pour in the heavy cream and mix well to create a smooth, creamy broth.
  3. Add the shredded chicken back to the pot and let it heat through for another 5 minutes.

  2. Squeeze in fresh lime juice for extra flavor.
