Ingredients
- 2 large chicken breasts, cut into ¼-inch thick strips
- ½ large red bell pepper, cut into ¼-inch thick strips
- ½ large green bell pepper, cut into ¼-inch thick strips
- 1 large red onion, cut into ¼-inch thick strips
- 2 tablespoons olive oil, divided between the chicken and vegetables
- 1 ounce packet fajita seasoning, about 2 tablespoons if using homemade
- 8 small flour tortillas, optional, warmed for serving
- sour cream and shredded cheddar cheese, optional, for topping
- lime wedges, optional, for squeezing over the finished fajitas
Instructions
- Season the Chicken: In a large bowl, toss the chicken strips with 1 tablespoon of the olive oil and half of the fajita seasoning until evenly coated, about 2 minutes.
- Coat the Vegetables: In a second bowl, toss the bell pepper and red onion strips with the remaining 1 tablespoon olive oil and the remaining seasoning until every strip is coated.
- Preheat the Air Fryer: Heat your air fryer to 400°F for 3 minutes so the basket is hot before the food goes in.
- Air Fry the Chicken: Arrange the chicken in a single layer and cook at 400°F for 8 to 10 minutes, shaking the basket halfway through, until the chicken reaches 165°F inside.
- Air Fry the Vegetables: Transfer the chicken to a plate, then cook the peppers and onion in the basket at 400°F for 5 to 6 minutes, shaking once, until tender with charred edges.
- Combine Everything: Return the chicken to the basket with the vegetables and air fry for 1 more minute to warm everything together.
- Warm the Tortillas: Wrap the flour tortillas in foil and heat them in the air fryer at 350°F for 2 to 3 minutes until soft and warm.
- Fill the Tortillas: Spoon about ½ cup of the chicken and vegetable mixture down the center of each tortilla.
- Garnish and Serve: Top with sour cream, shredded cheddar, and a squeeze of lime if you like, then serve right away.
