Ingredients

2 ripe bananas, mashed

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup granulated sugar

1/4 cup brown sugar

2 large eggs

1/3 cup unsalted butter, melted

1/2 cup whole milk

1 teaspoon vanilla extract

1/4 cup sour cream or Greek yogurt

1 cup semi-sweet chocolate chips

1/3 cup heavy cream

1 tablespoon butter

1 teaspoon vanilla extract for glaze

1/4 cup chopped walnuts

Instructions

1. Preheat the oven to 350°F (175°C) and grease a nonstick doughnut pan thoroughly.

2. Mash the ripe bananas in a mixing bowl until mostly smooth.

3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

4. In another bowl, whisk together the mashed bananas, granulated sugar, brown sugar, eggs, melted butter, milk, vanilla extract, and sour cream until smooth.

5. Slowly combine the wet ingredients with the dry ingredients and stir gently until just mixed.

6. Transfer the batter into a piping bag or zip-top bag with the corner cut off.

7. Pipe the batter into the doughnut pan cavities, filling each about three-quarters full.

8. Bake for 12–15 minutes or until the doughnuts spring back lightly when touched.

9. Let the doughnuts cool in the pan for 5 minutes before transferring them to a wire rack.

10. In a microwave-safe bowl, combine chocolate chips, heavy cream, and butter. Heat in short intervals, stirring frequently until smooth.

11. Stir vanilla extract into the glaze.

12. Dip the cooled doughnuts into the chocolate glaze and allow excess glaze to drip off.

13. Sprinkle chopped walnuts on top before the glaze sets.

14. Allow the glaze to firm for 10–15 minutes before serving.

Notes

Use very ripe bananas with brown spots for the sweetest flavor and softest texture.

Avoid overmixing the batter to keep the doughnuts light and fluffy instead of dense.

Allow the doughnuts to cool before glazing so the chocolate coating sets smoothly and evenly.
