Ingredients
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 cups granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup hot coffee or hot water
1 cup cherry filling
1 1/2 cups heavy whipping cream
1/3 cup powdered sugar
1/2 cup chocolate shavings
12 whole cherries
Instructions
1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners
2. Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt
3. Mix eggs, milk, oil, and vanilla extract until smooth
4. Combine wet and dry ingredients and add hot coffee or water
5. Divide batter into liners filling 2/3 full
6. Bake 18–22 minutes until done
7. Cool completely on a rack
8. Core cupcakes and fill with cherry filling
9. Whip cream with powdered sugar to soft peaks
10. Frost cupcakes evenly
11. Top with chocolate shavings and cherries
12. Serve and enjoy
