2 large blood oranges
2 ripe avocados
5 cups arugula
1/4 medium red onion
1/3 cup crumbled feta cheese
1/4 cup chopped pistachios
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon sea salt
1/4 teaspoon black pepper
Instructions

2. Slice the top and bottom off the blood oranges, carefully remove the peel and white pith, then cut the oranges into rounds or segments.
