Description

These Burger Dinner Foil Packets feature seasoned ground beef, tender baby gold potatoes, crinkle cut carrots, and red onion, all topped with melted colby jack cheese and baked together in a sealed packet of savory, smoky flavor.

They’re perfect for busy weeknights, camping trips, or an easy family dinner with minimal cleanup.

Ingredients

  • 2 pounds lean ground beef, 85/15 keeps the packets juicy
  • 1 packet dried onion soup mix
  • 1.5 pounds baby gold potatoes, quartered
  • 12 ounces frozen crinkle cut carrots, no need to thaw
  • 1 medium red onion, diced
  • 1 tablespoon olive oil, to coat the vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika, for a subtle smoky note
  • 6 slices colby jack cheese

Instructions

  1. Preheat the Oven: Heat your oven to 425°F and tear four 18×12-inch sheets of heavy-duty foil.
  2. Season the Beef: In a large bowl, combine the ground beef, dried onion soup mix, 1/2 teaspoon garlic powder, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper, mixing gently for about 1 minute until just combined.
  3. Season the Vegetables: In a second large bowl, toss the quartered potatoes, frozen carrots, diced red onion, and olive oil with the remaining 1/2 teaspoon garlic powder, 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1/2 teaspoon smoked paprika until evenly coated.
  4. Build the Base: Divide the vegetable mixture evenly among the four foil sheets, piling it in the center of each.
  5. Add the Beef: Divide the beef into four equal portions, flatten each into a patty about 3/4 inch thick, and place one on top of each vegetable pile.
  6. Top with Cheese: Lay the colby jack slices over the beef, using 2 slices on two packets and 1 slice on the other two.
  7. Seal and Bake: Fold the foil over the ingredients and crimp the edges tightly, leaving a little room for steam, then place the packets on a baking sheet and bake for 35-40 minutes until the potatoes are fork-tender and the beef reaches 160°F.
