Ingredients

2 cups Cherry Coke

1 package (3 oz) cherry gelatin

1 cup boiling water

1/2 cup cold water

1 can (20 oz) crushed pineapple, drained

1/2 cup maraschino cherries, chopped

1 cup whipped topping

1/2 cup cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract


Instructions

1. Add cherry gelatin to a bowl and pour in boiling water, stirring until fully dissolved.

2. Mix in cold water, then gently stir in Cherry Coke to combine.

3. Fold in drained pineapple and chopped cherries evenly.

4. Pour mixture into a serving dish and refrigerate for 2–3 hours until partially set.

5. Beat cream cheese until smooth, then mix in powdered sugar and vanilla extract.

6. Fold whipped topping into the cream cheese mixture until light and fluffy.

7. Spread topping over partially set gelatin carefully to keep layers intact.

8. Chill for another 3–4 hours or overnight until fully set.

9. Garnish with whole cherries before serving.

Notes

Make sure gelatin is completely dissolved to avoid grainy texture.

Drain pineapple thoroughly to prevent excess liquid.

Allow the base layer to partially set before adding topping for clean layers.
