Ingredients
700g chicken (cut into medium pieces)
1/2 cup plain yogurt
1 tablespoon ginger garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon salt
3 tablespoons oil or ghee
2 medium onions (finely sliced)
1 tablespoon ginger garlic paste
2 medium tomatoes (pureed)
2 bay leaves
4 green cardamom pods
4 cloves
1 inch cinnamon stick
2 teaspoons Kashmiri red chili powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1 teaspoon garam masala
1 teaspoon paprika (optional)
1/4 cup water or chicken stock
2 tablespoons cream or 1 tablespoon butter
2 tablespoons fresh cilantro (chopped)
Instructions
1. Marinate chicken with yogurt, ginger garlic paste, turmeric, chili powder, and salt. Let it rest for at least 30 minutes.
2. Heat oil or ghee in a pan and add bay leaves, cardamom, cloves, and cinnamon. Let them release aroma.
3. Add sliced onions and cook until golden brown.
4. Stir in ginger garlic paste and sauté until fragrant.
5. Add tomato puree and cook until oil separates.
6. Lower heat and add chili powder, coriander powder, cumin powder, and paprika.
7. Add marinated chicken and cook for 5–7 minutes.
8. Pour in water or stock, cover, and simmer for 20–25 minutes.
9. Adjust consistency and seasoning as needed.
10. Add garam masala and cream or butter, simmer briefly.
11. Garnish with cilantro and serve hot.
Notes
Cook onions slowly until golden for maximum flavor.
Use Kashmiri chili powder for color without too much heat.
Let the curry rest for 10 minutes before serving for better flavor.
