Ingredients

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter melted

1/4 cup granulated sugar

24 oz cream cheese softened

3/4 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1/2 cup sour cream

1 cup brown sugar

2 tbsp ground cinnamon

2 tbsp all-purpose flour

3 tbsp unsalted butter melted (for swirl)

1/2 cup powdered sugar

2 tbsp milk or cream

1/4 cup honey or caramel sauce


Instructions

1. Preheat oven to 325°F (163°C) and prepare a springform pan

2. Mix graham cracker crumbs, melted butter, and sugar, then press into the pan and bake for 10 minutes

3. Combine brown sugar, cinnamon, flour, and melted butter to create the cinnamon swirl mixture

4. Beat cream cheese until smooth, then add sugar, eggs one at a time, vanilla, and sour cream

5. Pour half the batter over the crust, add cinnamon swirl, then repeat layers and swirl gently

6. Place pan in a water bath and bake for 55–70 minutes until center slightly jiggles

7. Cool gradually in oven, then bring to room temperature

8. Mix powdered sugar, milk, and honey or caramel to make glaze

9. Drizzle glaze over cheesecake and refrigerate at least 4 hours or overnight
