Ingredients

2 cups cooked corned beef diced

3 cups potatoes diced

1 medium onion chopped

1 cup bell peppers chopped

2 cloves garlic minced

2 tablespoons butter or oil

1 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

2 tablespoons fresh parsley chopped

2 eggs optional


Instructions

1. Dice the corned beef potatoes onion and bell peppers into evenly sized pieces

2. Heat butter or oil in a large skillet over medium heat

4. Add the onion and bell peppers cooking until softened and slightly caramelized

6. Add garlic paprika salt and pepper cooking for another 1–2 minutes until fragrant

7. Press the mixture into the pan and let it crisp undisturbed for a few minutes

8. Flip sections and repeat for even crispiness

9. If using eggs crack them on top cover and cook until desired doneness

10. Garnish with fresh parsley and serve hot
