Ingredients

2 cups cottage cheese

1 ½ cups fresh cranberries

1 tablespoon orange zest

¼ cup fresh orange juice

1 ½ cups all-purpose flour

2 teaspoons baking powder

¾ cup granulated sugar

2 large eggs

½ cup melted butter

1 teaspoon vanilla extract

¼ teaspoon salt

2 tablespoons powdered sugar for garnish

Instructions

1. Preheat the oven to 350°F and grease an 8×8-inch baking dish or line it with parchment paper.

2. Wash and dry the cranberries thoroughly. Zest and juice the orange, then set both aside.

3. In a large bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.

4. In another bowl, mix the cottage cheese, eggs, melted butter, orange juice, orange zest, and vanilla extract until smooth.

5. Slowly combine the wet ingredients with the dry ingredients, stirring gently until a thick batter forms.

6. Fold the cranberries carefully into the batter and reserve a small handful for the top.

7. Pour the batter into the prepared baking dish and spread evenly with a spatula.

8. Sprinkle the reserved cranberries over the top for extra color and texture.

9. Bake for 35 to 45 minutes or until the top is golden brown and a toothpick inserted into the center comes out mostly clean.

10. Allow the breakfast bake to cool for 10 to 15 minutes before slicing and serving.

11. Dust lightly with powdered sugar before serving if desired.

Notes

Use room temperature ingredients for a smoother batter and softer texture.

Do not overmix the batter or the breakfast bake may become dense instead of fluffy.

Fresh orange zest gives the best citrus flavor and aroma compared to bottled flavoring.
