Ingredients
2 lbs boneless skinless chicken thighs or breasts
1/2 cup honey
1/3 cup low sodium soy sauce
4 cloves garlic minced
1/4 cup ketchup
2 tablespoons olive oil or sesame oil
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
2 tablespoons cornstarch
3 tablespoons water
2 green onions chopped
1 tablespoon sesame seeds
2 cups cooked white rice
Instructions
1. Place trimmed chicken into the crockpot in an even layer.
2. Whisk together honey, soy sauce, garlic, ketchup, oil, oregano, pepper, and red pepper flakes.
3. Pour sauce over chicken and coat evenly.
4. Cook on LOW for 6–7 hours or HIGH for 3–4 hours.
5. Mix cornstarch with water and stir into crockpot.
6. Cook on HIGH for 20–30 minutes until sauce thickens.
7. Shred chicken if desired and mix with sauce.
8. Serve over rice and garnish with green onions and sesame seeds.
Notes
Add fresh grated ginger for extra depth of flavor.
Chicken thighs provide the best texture and moisture.
