Ingredients
3 large eggs
3/4 cup granulated sugar
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup milk
3/4 cup creamy peanut butter
1 cup powdered sugar
1 cup heavy cream
1 1/2 cups chocolate (milk or dark, chopped)
2 tablespoons butter
1 cup peanut butter cups (chopped)
Instructions
1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
2. Whisk eggs and sugar until pale, thick, and fluffy.
3. Sift together flour, cocoa powder, baking powder, and salt, then gently fold into the egg mixture.
4. Add milk and vanilla extract, mixing until just combined.
5. Spread batter evenly into the pan and bake for 10–12 minutes.
6. Turn cake onto a powdered sugar-dusted towel, remove parchment, and roll while warm. Let cool completely.
7. Mix peanut butter, powdered sugar, vanilla, and a bit of cream until smooth.
8. Unroll cake, spread filling evenly, and roll back up tightly.
9. Heat cream, pour over chocolate and butter, and stir until smooth to make ganache.
10. Spread ganache over the roll and top with chopped peanut butter cups.
11. Chill for at least 1 hour, then slice and serve.
Notes
Roll the cake while it’s still warm to prevent cracking later.
