Ingredients

1 cup all-purpose flour

1 cup granulated sugar

1/3 cup unsweetened cocoa powder

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 large egg

1/2 cup buttermilk

1/2 cup warm coffee or warm water

1/4 cup vegetable oil

1 teaspoon vanilla extract

1 cup unsalted butter, softened

3 1/2 cups powdered sugar

2 tablespoons heavy cream or milk

1 teaspoon vanilla extract

1 tablespoon Irish cream flavoring or Irish cream liqueur (optional)

1 pinch salt

Green sprinkles for decoration

White pearl sprinkles for decoration

Instructions

1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.

3. In a separate bowl, combine the egg, buttermilk, warm coffee, vegetable oil, and vanilla extract.

4. Slowly mix the wet ingredients into the dry ingredients until fully combined.

5. Fill each cupcake liner about two-thirds full with batter.

6. Bake for 18 to 22 minutes or until a toothpick inserted into the center comes out clean.

7. Allow the cupcakes to cool completely on a wire rack.

8. Beat the softened butter until creamy, then gradually add powdered sugar.

9. Mix in the heavy cream, vanilla extract, Irish cream flavoring if using, and salt until fluffy.

10. Transfer the frosting into a piping bag and frost the cooled cupcakes.

11. Decorate with green sprinkles and serve.

Notes

Bring all refrigerated ingredients to room temperature before baking for the smoothest batter and fluffiest cupcakes.

Do not overmix the batter after adding the flour because overmixing can create dense cupcakes instead of soft and tender ones.

Always allow the cupcakes to cool completely before frosting to prevent the frosting from melting or sliding off.
