Ingredients
4 bagels
1 tablespoon butter or olive oil
6 large eggs
1/2 cup milk or heavy cream
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/2 cup cooked bacon or sausage or ham
1/2 cup shredded cheese
1/4 cup diced bell peppers
1/4 cup chopped spinach
2 tablespoons chopped onions
1/4 cup sliced tomatoes
Instructions
1. Slice the bagels in half and scoop out a small portion from the center to create space for the filling
2. Lightly brush each half with butter or oil and pre-toast in the oven at 375°F (190°C) for 5–7 minutes
3. Whisk together eggs, milk, salt, pepper, garlic powder, and paprika until smooth
4. Mix in cooked meat, vegetables, and most of the cheese
5. Fill each bagel half with the mixture without overfilling
6. Top with tomatoes and remaining cheese
7. Bake at 375°F (190°C) for 15–20 minutes until set
8. Let rest for 5 minutes before serving
