Ingredients

1 cup creamy peanut butter

2 large eggs

1/3 cup honey

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips

Instructions

1. Preheat the oven to 350°F (175°C) and grease or line a 12-cup muffin pan.

2. Add the peanut butter, eggs, honey, and vanilla extract to a large mixing bowl.

3. Whisk the ingredients together until the batter becomes smooth and creamy.

4. Stir in the baking soda and salt until fully combined.

5. Fold the chocolate chips gently into the batter.

6. Divide the batter evenly between the muffin cups, filling each about three-quarters full.

7. Sprinkle extra chocolate chips on top if desired.

8. Bake for 15–18 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out mostly clean.

9. Let the muffins cool in the pan for 5 minutes before transferring to a cooling rack.

10. Serve warm or allow to cool completely before storing.

Notes

Use creamy peanut butter for the smoothest texture and best consistency. Natural peanut butter can work but should be stirred thoroughly before using.

Avoid overbaking the muffins because flourless batters can dry out quickly. Remove them once the centers are set.

Allow the muffins to cool slightly before removing them from the pan so they hold their shape properly.
