Ingredients
2 ½ cups all-purpose flour
⅓ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, cold and cubed
⅔ cup heavy cream
1 large egg
1 teaspoon vanilla extract
1 tablespoon lemon zest
1 cup mixed berries (blueberries, raspberries, blackberries)
1 cup powdered sugar
2 tablespoons milk or heavy cream for glaze
½ teaspoon vanilla extract for glaze
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
3. Add the cold cubed butter and cut it into the flour mixture until coarse crumbs form.
4. In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and lemon zest.
5. Pour the wet ingredients into the dry ingredients and gently mix until a dough begins to form.
6. Carefully fold in the mixed berries without overmixing the dough.
7. Transfer the dough onto a lightly floured surface and shape it into a circle about 1 inch thick.
8. Cut the dough into 8 equal wedges and place them on the prepared baking sheet.
9. Refrigerate the scones for 15 minutes before baking.
10. Bake for 18 to 22 minutes or until the tops are lightly golden.
11. Let the scones cool slightly while preparing the glaze.
12. Whisk together powdered sugar, milk or cream, and vanilla extract until smooth.
13. Drizzle the glaze over the warm scones and serve.
Notes
Keep the butter very cold to create flaky and tender scones.
If using frozen berries, do not thaw them before adding to the dough.
Chill the shaped scones before baking to help them rise taller and maintain their shape.
