Ingredients

1 pound ground turkey

2 cups cooked jasmine rice

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon honey

1 tablespoon sriracha

1 tablespoon rice vinegar

1 cucumber, sliced

1 cup shredded carrots

1 avocado, sliced

2 green onions, sliced

1 tablespoon sesame seeds

1/3 cup mayonnaise

1 tablespoon lime juice

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions

1. Cook the jasmine rice according to package instructions until fluffy and tender. Set aside and keep warm.

2. In a small bowl, mix the mayonnaise, lime juice, and half of the sriracha until smooth to create the creamy sauce. Refrigerate until ready to use.

3. Heat sesame oil in a large skillet over medium heat. Add the ground turkey and cook while breaking it apart until browned and fully cooked.

4. Stir in the garlic and ginger, cooking for about one minute until fragrant.

5. Add soy sauce, honey, rice vinegar, remaining sriracha, salt, and black pepper. Stir well and let the turkey simmer for several minutes until coated and flavorful.

6. Slice the cucumber, shred the carrots, and prepare the avocado and green onions.

7. Divide the warm rice into serving bowls.

8. Top each bowl with the cooked ground turkey, cucumber slices, shredded carrots, and avocado.

9. Drizzle the spicy mayo sauce generously over the bowls.

10. Finish with green onions and sesame seeds before serving immediately.

Notes

Use freshly cooked rice for the best texture and flavor.

Do not overcook the turkey or it may become dry.

Add the avocado just before serving to keep it fresh and vibrant.
