Ingredients
1 pound ground beef
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 packet taco seasoning
1/4 cup water
1 cup refried beans
1 cup cooked Mexican rice
6 large flour tortillas
2 cups enchilada sauce
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
1 jalapeño, sliced
2 tablespoons fresh cilantro, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F and lightly grease a large baking dish or cast iron skillet.
2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened.
3. Stir in minced garlic and cook for about 1 minute until fragrant.
4. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease if needed.
5. Sprinkle taco seasoning over the beef and add water. Stir well and simmer for several minutes.
6. Mix in the refried beans and cooked Mexican rice until evenly combined.
7. Warm the tortillas slightly to make rolling easier.
8. Place filling into the center of each tortilla and top with cheddar and Monterey Jack cheese.
9. Fold in the sides and roll tightly into burritos.
10. Arrange the burritos seam-side down in the prepared baking dish.
11. Pour enchilada sauce evenly over the burritos.
12. Top with the remaining cheese.
13. Bake for 25 to 30 minutes until the cheese is melted and bubbly.
14. Remove from the oven and allow the burritos to rest for a few minutes.
15. Garnish with jalapeños, cilantro, and sour cream before serving.
Notes
Use freshly shredded cheese for the smoothest and creamiest melt.
Warm the tortillas before rolling to prevent cracking and tearing.
Allow the burritos to rest for a few minutes after baking so the filling stays together when serving.
