Ingredients

6 large russet potatoes

6 tablespoons butter

1 cup sour cream

4 ounces cream cheese

1/2 cup milk

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

10 slices bacon, cooked and chopped

1/4 cup sliced green onions

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 tablespoons fresh chives

Instructions

1. Preheat the oven to 400°F and wash the potatoes thoroughly. Pierce each potato several times with a fork.

2. Bake the potatoes for 50 to 60 minutes until fork tender and the skins are slightly crisp.

3. While the potatoes bake, cook the bacon until crispy, then chop it into small pieces.

4. Allow the potatoes to cool slightly, then scoop the flesh into a large mixing bowl.

5. Add butter, sour cream, cream cheese, milk, garlic powder, onion powder, salt, black pepper, and paprika to the potatoes.

6. Mash the mixture until smooth and creamy without overmixing.

7. Fold in most of the cheddar cheese, mozzarella cheese, bacon, and green onions.

8. Grease a casserole dish lightly and spread the potato mixture evenly into the dish.

9. Top with the remaining cheese, bacon, and a sprinkle of paprika.

10. Bake at 375°F for 20 to 25 minutes until hot, bubbly, and golden brown.

11. Broil for 2 to 3 minutes if desired for a crispier cheesy topping.

12. Garnish with fresh chives and extra green onions before serving warm.

Notes

Baking the potatoes instead of boiling them creates a richer potato flavor and a fluffier texture.

Freshly shredded cheese melts much better than pre-shredded cheese and gives the casserole a creamier consistency.

Let the casserole rest for about 5 minutes before serving so it holds its shape better when scooped.
