Ingredients
1 lb ground beef
1 small onion chopped
2 cloves garlic minced
1 packet taco seasoning
1/2 cup water or beef broth
1 can (15 oz) black beans drained and rinsed
1 can (15 oz) corn drained
1 can (10 oz) diced tomatoes with green chilies
1 cup salsa
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6 small tortillas or 3 cups crushed tortilla chips
1/2 cup sour cream
1/2 tsp cumin
1/2 tsp smoked paprika
1/4 tsp chili powder
1 cup diced fresh tomatoes
2 green onions sliced
2 tbsp chopped cilantro
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish
2. Cook ground beef until browned and drain fat
3. Add onion and garlic and cook until fragrant
4. Stir in seasoning and liquid and simmer
5. Mix in beans corn and tomatoes
6. Layer salsa tortillas and meat mixture
7. Add cheese and repeat layers
8. Bake covered then uncovered until bubbly
9. Rest before serving
10. Garnish and serve
Notes
Use freshly shredded cheese for best melting
Let casserole rest before slicing
