Ingredients

1 can (8 oz) refrigerated biscuit dough

1 lb ground beef

1 small onion finely chopped

2 cloves garlic minced

1 packet (1 oz) taco seasoning

1/2 cup water

1 cup diced tomatoes drained

1/2 cup diced bell peppers

1/2 cup corn kernels

1/4 cup sliced jalapeños optional

1 cup sour cream

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1/2 tsp cumin

1/2 tsp paprika

1/4 tsp black pepper

1 to 1 1/2 cups shredded Mexican blend cheese

2 tbsp chopped fresh cilantro

Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a baking dish. Press biscuit dough evenly into the base and pre-bake for 5–7 minutes.

2. Cook ground beef in a skillet over medium heat until browned. Add onion and cook until soft, then stir in garlic.

3. Add taco seasoning and water, stir, and simmer until thickened.

4. Spread the meat mixture evenly over the crust.

5. Add tomatoes, bell peppers, corn, and jalapeños evenly on top.

6. In a bowl, mix sour cream, mayonnaise, cheddar cheese, cumin, paprika, and pepper until smooth.

7. Spread the creamy mixture over the vegetable layer.

8. Top with shredded Mexican blend cheese.

9. Bake for 25–30 minutes until bubbly and golden.

10. Let rest for 5–10 minutes, garnish with cilantro, and serve.

Notes

Use full-fat sour cream for a richer and creamier texture.

Drain excess grease from the meat to prevent a soggy casserole.

Let the casserole rest before slicing to keep layers intact.
