1/4 cup brown sugar packed

1/2 cup creamy peanut butter

2 large eggs room temperature

1 1/2 teaspoons vanilla extract

1/2 cup whole milk room temperature

1/2 cup unsalted butter softened

3/4 cup creamy peanut butter

2 to 2 1/2 cups powdered sugar

2 to 3 tablespoons heavy cream or milk

1 teaspoon vanilla extract

1 pinch salt

12 mini peanut butter cups halved

1/4 cup chocolate chips or shavings

2 tablespoons crushed peanuts


Instructions

1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.

2. Whisk flour, baking powder, baking soda, and salt in a bowl.

3. Beat butter and sugars until light and fluffy, then mix in peanut butter.

4. Add eggs one at a time, then vanilla extract.

5. Alternate adding dry ingredients and milk, mixing gently.

6. Fill liners two-thirds full with batter.

7. Bake for 18–22 minutes until a toothpick comes out clean.

8. Cool completely on a wire rack.

9. Beat frosting ingredients until smooth and fluffy.

10. Pipe frosting onto cooled cupcakes and add toppings.

Notes

Use room temperature ingredients for a smoother batter and better texture.
