Description

Ingredients

1 cup all-purpose flour

1/2 cup pumpkin puree

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg yolk

1 teaspoon vanilla extract

1 teaspoon pumpkin spice blend

1/2 teaspoon baking soda

1/4 teaspoon salt

2 tablespoons granulated sugar

1 teaspoon cinnamon


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Cream together butter, brown sugar, and granulated sugar until light and fluffy.

3. Add egg yolk, pumpkin puree, and vanilla extract, mixing until smooth.

4. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin spice.

5. Gradually combine dry ingredients with wet ingredients to form a soft dough.

6. Chill the dough for 30–60 minutes for better texture and flavor.

7. Mix cinnamon and sugar in a small bowl for coating.

8. Scoop and roll dough into balls, then coat in cinnamon sugar.

9. Place on baking sheet and bake for 10–12 minutes.

Notes

Do not skip chilling the dough as it improves both texture and flavor.

Blot pumpkin puree slightly to avoid excess moisture in the dough.
