Ingredients
2 large boneless skinless chicken breasts
16 ounces penne pasta
2 cups Alfredo sauce
8 ounces cream cheese softened
1 cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
3 cloves garlic minced
1 cup chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1 tablespoon butter or cooking spray for greasing slow cooker
Instructions
1. Lightly grease the inside of the slow cooker with butter or nonstick cooking spray.
2. Place the chicken breasts into the bottom of the slow cooker in a single layer.
3. Add Alfredo sauce, softened cream cheese, chicken broth, minced garlic, Italian seasoning, salt, and black pepper over the chicken.
4. Cover and cook on LOW for 4 to 6 hours or HIGH for 2 to 3 hours until the chicken is tender and fully cooked.
5. Remove the cooked chicken from the slow cooker and shred it using two forks.
6. Return the shredded chicken back into the creamy Alfredo mixture and stir well.
7. While the chicken is cooking, boil the penne pasta in salted water until just al dente according to package instructions.
8. Drain the pasta well and add it directly into the slow cooker.
9. Stir in the Parmesan cheese and mozzarella cheese until fully melted and creamy.
10. Cover the slow cooker for an additional 10 to 15 minutes to allow the cheese to melt completely.
