Ingredients

2 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg

1 egg yolk

2 teaspoons vanilla extract

½ teaspoon almond extract (optional)

¼ cup granulated sugar (for rolling)

Instructions

1. In a bowl, whisk together flour, baking soda, baking powder, and salt.

2. In a separate bowl, beat butter and sugar until light and fluffy.

3. Add egg and egg yolk, mixing well after each addition.

4. Stir in vanilla extract and optional almond extract.

5. Gradually mix dry ingredients into wet ingredients until just combined.

6. Cover and chill the dough for 30–60 minutes.

7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

8. Roll dough into balls and coat in granulated sugar.

9. Place on baking sheet spaced 2 inches apart.

10. Bake for 9–11 minutes until edges are set and centers are soft.

11. Cool on baking sheet for 5 minutes, then transfer to a rack.

Notes

Use room temperature butter for a smoother dough and better texture.

Do not overbake; cookies should look slightly underdone in the center when removed.

Chilling the dough improves flavor and prevents excessive spreading.
