2 cups chopped dates

1 cup brown sugar

2 cups old-fashioned oats

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

1 cup unsalted butter, melted

1/2 cup chopped walnuts or pecans (optional)


Instructions

1. Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper or lightly grease it.

2. Add the chopped dates and water to a saucepan over medium heat. Cook while stirring frequently until the dates soften and form a thick filling.

3. Stir in the lemon juice and vanilla extract, then remove the filling from the heat and allow it to cool slightly.

4. In a large bowl, combine the oats, flour, brown sugar, baking soda, salt, and cinnamon.
