Why weight is better for baking

A cup measures volume and a gram measures weight, so the conversion depends on the ingredient and on how you fill the cup. Spooned and levelled flour weighs about 120 g a cup; scooped and packed it can reach 150 g. A kitchen scale removes the guesswork.

About these numbers

The weights are widely published averages for each ingredient. Brands, humidity and how finely something is ground all move the result a little, so treat them as a reliable starting point, not a lab measurement.
