Tips for scaling recipes
Ingredient amounts scale well, but cooking times and pan sizes do not. When you double a bake, use two pans rather than one deep one, and start checking for doneness at the original time. Go gently with salt, spices and raising agents when scaling up a lot, then adjust to taste.
Rounding
Results are rounded to the nearest kitchen fraction (1/8, 1/4, 1/3, 1/2, 2/3, 3/4). For baking, a kitchen scale and the Cups to Grams converter give the most reliable amounts.
